Gluten Free Pork Tenderloin with Apple Salsa

Ingredients
  • 1 or 2 pork tenderloins about 3 lbs.
  • 1 teaspoon dried oregano
  • 1 teaspoon McCormick Ground Cumin - gluten free
  • 1 teaspoon McCormick Garlic Powder - gluten free
  • 1 teaspoon ground coriander - Spice Islands are gluten free
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • olive oil
  • 2 garlic cloves, minced
  • SALSA
  • 1 red apple, diced
  • 1 green apple, diced
  • ¼ cup fresh cilantro, chopped
  • ½ onion, finely chopped (red is better)
  • 1 lime, juiced
  • 1 jalapeno pepper, minced (optional)
  • 3 tablespoons olive oil
  • 2 tablespoons grape seed oil
  • salt and pepper to taste
Instructions
  1. In a medium bowl, combine all the salsa ingredients and keep in the fridge until the pork is ready.
  2. Mix all the dry ingredients in a small bowl.
  3. Pat dry the tenderloin with paper towels. Sprinkle the rub over tenderloin with a dry hand, pressing gently unto the meat. Cover and refrigerate overnight for best result.
  4. Preheat oven to 450 degrees F. In a large oven safe skillet (cast iron) heat over medium high heat. Add a couple splashes of olive oil then the garlic. Saute garlic until fragrant. Sear the tenderloins on all sides for about 10 minutes. Transfer the skillet into the oven and bake for 20 minutes. Let sit for 5 minutes before slicing. Top with salsa.
