Easy gluten free red velvet cake roll

Ingredients
  • 1 cup Bob's Red Mill 1 to 1 Baking Flour
  • ¼ cup Hershey's 100% Unsweetened Cocoa Powder - gluten free
  • ½ teaspoon Clabber Girl Baking Powder - gluten free
  • ¼ teaspoon baking soda
  • ⅛ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 (0.67 oz) tube Betty Crocker Gel Food Color (Classic Colors) - gluten free
  • 4 large egg, separated at room temperature
  • water
  • ½ cup granulated sugar plus ⅓ cup, divided
  • FILLING:
  • 1 (8 oz) cream cheese at room temperature
  • 6 tablespoons butter at room temperature
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • TOPPING OPTIONS:
  • shaved chocolates
  • berries
Instructions
  1. Preheat oven at 375 degrees F.
  2. Line a jelly pan 17 inches by 11 inches with parchment paper; generously butter up the parchment paper and set aside.
  3. Sprinkle ¼ cup powdered sugar over a cotton kitchen towel. ( big enough for the cake) set aside.
  4. Beat egg whites in a large bowl until soft peaks form; gradually add the ½ cup sugar beating until stiff peaks form. In another bowl, beat egg yolks and vanilla in a medium bowl on medium speed for 3 minutes. Then gradually add the remaining ⅓ cup sugar and beat for additional 2 minutes.
  5. Squeeze red food color into a measuring cup and add water to make a little over ⅓ cup.
  6. Combine the flour, baking soda, baking powder, salt, cocoa powder in a large bowl.
  7. Gradually add the egg yolk mixture into the flour mixture then add the colored water and beat until well blended. Add the egg white mixture and mix until smooth.
  8. Spread the batter evenly in the prepared pan. Bake for about 12 to 15 minutes or until top springs back when touched.
  9. Immediately loosen the edges. Invert cake onto the prepared towel and roll starting from the narrower side of the cake. Place the rolled cake on a wire rack to cool completely.
  10. Beat the cream cheese filling until well blended.
  11. Unroll the cake and carefully spread the cream cheese. Roll the cake cake and cover with plastic wrap. Refrigerate for at least 1 hour before slicing.
  12. Top with your favorite fruits and shaved chocolates. Yum
