Gluten Free Bacon-Cheese Bread

Cheesy gluten free bacon-cheese bread

Ingredients
  • 1 cup gluten free potato starch
  • 1 cup gluten free tapioca starch
  • 1 cup gluten free rice flour, plus more for dusting
  • 1 tablespoon baking powder
  • ½ teaspoon Bob's Red Mill Xanthan Gum - gluten free
  • 2 tablespoon granulated sugar
  • 1 teaspoon salt
  • 4 oz cream cheese at room temperature
  • 2 cups shredded cheese mix (monterey jack, sharp cheddar, mozzarella)
  • 1 jalapeno pepper, seeded and minced
  • 2 green onions, sliced
  • 5 to 6 strips of bacon, cooked and chopped
  • 2 eggs (1 egg for the dough and 1 more for egg wash)
  • 1 tablespoon butter, melted
  • 1½ cups whole milk
  • 1 tablespoon water
Instructions
  1. Preheat oven at 350 degrees F.
  2. Grease a baking pan with oil or butter.
  3. Combine the flours, baking powder, sugar, xanthan gum, and salt in a large bowl. In another bowl, mix the cream cheese, jalapeno, cheeses, green onions and the bacon. In another bowl, mix the milk, butter and the egg.
  4. Combine all 3 mixtures until well blended. Sprinkle some rice flour on the dough to make it less sticky. Form the dough into a log and place on the prepared pan. Whisk the egg and water in a small bowl and brush the dough before baking.
  5. Bake from 50 to 55 minutes. Let cool and slice.
