Gluten Free Belgian Waffles with Bacon

Gluten Free Belgian Waffles with Bacon

Ingredients
  • 2¼ cups Bob's Red Mill All Purpose Flour - gluten free
  • 2 large eggs, separated
  • 8 strips Applegate Bacon - gluten free
  • 1 teaspoon vanilla
  • ¾ cup sugar
  • maple syrup
  • 1½ cups milk
  • 1 stick butter, melted
  • 3½ teaspoon Clabbergirl Baking Powder - gluten free
  • 2 tablespoons brown sugar
Instructions
  1. Preheat oven to 400 degrees F. Arrange bacon to single layer on a rimmed baking sheet. Sprinkle brown sugar over the bacon and bake until crispy about 4 to 5 minutes. Make sure to watch it.
  2. Combine flour, sugar and baking powder in a large bowl. Use a handheld beater to remove all clumps. In another bowl, combine melted butter, egg yolks, vanilla and milk. In a medium bowl, whisk egg whites until foamy.
  3. Combine flour mixture with milk mixture and stir then add the egg whites.
  4. Preheat a waffles maker. Pour mixture over waffle maker and cook until done. Serve waffles with bacon and maple syrup. Yum!
