Easy gluten free blackened salmon with mango salsa

Ingredients
  • salmon filet
  • 2 tablespoons oil
  • 4 teaspoons of the cajun seasoning
  • CAJUN SEASONING:
  • 3 tablespoons McCorminck paprika - gluten free
  • 2 tablespoons fine kosher salt
  • 2 tablespoons McCormick garlic powder - gluten free
  • 1 tablespoon ground black pepper
  • 1 tablespoon ground white pepper
  • 1 tablespoons McCormick onion powder - gluten free
  • 1 tablespoon dried oregano
  • 1 tablespoon McCormick cayenne - gluten free
  • ½ tablespoon dried thyme
  • SALSA:
  • 1 ripe mango, peeled and diced
  • 1 medium cucumber, seeded and diced
  • 2 tablespoons olive oil
  • few cherry tomatoes, diced
  • 1 small jalapeno, minced
  • 3 tablespoons fresh cilantro, chopped
  • ¼ cup red onion, diced
  • juice of ½ lime
  • salt and pepper
Instructions
  1. Season the salmon with the cajun seasoning.
  2. Heat the oil in a large cast iron skillet over medium-high heat, add the salmon, and cook until deeply golden brown to slightly blackened then flip and cook the other side until golden brown. Transfer the salmon on a platter.
  3. Mix the salsa ingredients in a medium bowl.
  4. Serve salmon and salsa. Yum
Notes
CAJUN SEASONING
After mixing all the ingredients. Place the rest of the seasoning in an airtight container for future use.
