Gluten Free Buttermilk Fried Chicken

Gluten Free Buttermilk Fried Chicken

Ingredients
  • 8 to 10 pieces chicken drumsticks with skin
  • 2 cups buttermilk
  • 1½ cups Cup4Cup Multipurpose Flour - gluten free
  • 2 teaspoons Clabber Girl Baking Powder - gluten free
  • salt and pepper
  • McCormick Ground Paprika - gluten free
  • McCormick Ground Garlic - gluten free
  • vegetable oil for frying
Instructions
  1. In a large bowl, combine chicken with buttermilk and season with salt. Cover and refrigerate for few hour or overnight.
  2. Heat enough oil in a deep pan or deep fryer until a deep-fry thermometer registers 360.
  3. In a shallow bowl, mix the flour, paprika, ¼ teaspoon to ½ teaspoon black pepper and the garlic powder. Remove the chicken from the buttermilk, shake off the excess and roll in the flour mixture. Shake off the excess flour, place in the hot oil and fry, turning occasionally, until golden brown and cooked through, about 15 minutes and transfer to a plate with paper towels.
  4. Reheat the oil to 360 degrees F. Continue frying until done. Moist inside and crunchy on the outside. Yum!
