Gluten Free Pork Schnitzels

Ingredients
  • 8 to 10 boneless pork chops
  • ½ cup (or more) Cup4Cup Multipurpose flour - gluten free
  • Lawry's Seasoned Salt - gluten free
  • black pepper
  • 5 tablespoons milk
  • 2 large eggs, beaten
  • 1½ cups Ian's Panko - gluten free
  • olive oil
Instructions
  1. Using a meat hammer, pound the pork chops into ¼ to ⅛ inch thick.
  2. In a shallow bowl, mix eggs and milk; 2nd bowl flour and Lawry's Seasoned salt; 3rd bowl for the panko.
  3. Heat a splash of olive oil on a frying pan over medium heat. Dredge the pork into the flour mixture then the egg and finally unto the panko bowl. Fry for about 2 to 3 minutes per side until crispy and browned. Transfer to a plate with paper towels.
  4. Serve with lemon wedges. Yum!
