Gluten Free Cherry and Port Glazed Ham

Ingredients
  • 1 (7-14 lbs.) Jones Dairy Farm Whole Old Fashioned, Hickory Smoked or other ham
  • 1 cup Port or other sweet red wine
  • 3½ cups Swanson Chicken Broth - gluten free
  • 2 tablespoons Clabber Girl Cornstarch - gluten free
  • 2 medium size shallots, chopped
  • 2 tablespoons butter
  • ⅛ teaspoon ground allspice
  • 1 bag (5 ounces) Ocean Spray dried cherries - gluten free
  • ⅓ cup packed brown sugar
  • 1 turkey size oven cooking bag
Instructions
  1. In a large bowl, stir the broth and cornstarch together. Set aside.
  2. Heat the butter in a 12 inch skillet over medium heat. Add the shallots and cook until tender. Add the allspice, stir for 30 seconds.
  3. Add the red wine, brown sugar, and cherries. Heat to a boil over medium high heat. Reduce the heat to low. Cook until slightly thickened, stir occasionally.
  4. Stir in the broth mixture. Cook until it boils and thickens.
  5. Remove and discard the plastic covering of the ham. Place the ham in the bag. Pour about 1½ cups of the cherry sauce over ham. Reserve the rest for later. Close the bag with a nylon tie. Cut few slits on top of the bag to allow steam to escape.
  6. Bake at 250 degrees F. for 2½ hours or until heated through. Remove the ham from the bag and place on a serving platter. Serve with the remaining cherry glaze. Enjoy!
