Ingredients
  • 1 pound skinless chicken breast, cut into small pieces
  • 2 tablespoons Emeril's Cajun Seasoning - Gluten Free
  • 1 cup (you might need more) Bob's Red Mill All Purpose Flour - gluten free
  • 2 eggs beaten
  • vegetable oil for frying
Instructions
  1. Combine the flour and Cajun seasoning in a bowl. In another bowl beat eggs and add about 3 tablespoons of the flour mixture to make a batter.
  2. Heat oil over medium high heat.
  3. Add chicken pieces into flour mixture to coat then dip the chicken pieces into the batter. Fry for about 2 to 3 minutes or until golden. Remove the nuggets with a slotted spoon into a plate lined with paper towel. Cook the remaining chicken. Serve

Do you think I could use any cajun seasoning, I know I can’t get Emeril’s brand in my neck of the woods.
I guess I can try and see how it goes, right?

Most of the other brands are not gluten free though.
