Gluten Free Pork Tacos

Ingredients
  • 1 to 2 pounds pork belly strips (from Costco)
  • Guerrero Gluten Free Soft Tortillas
  • ½ cup Tamari soy sauce - gluten free
  • juice of 1 lime plus ½ for the salsa
  • salt and black pepper
  • 5 garlic cloves, minced
  • 1 inch fresh ginger, minced
  • 1 tablespoon sesame oil
  • ½ head of iceberg lettuce, thinly sliced
  • 1 jalapeno pepper, minced
  • 1 cup cherry tomatoes, diced
  • ½ of red onion, diced
  • ⅓ cup fresh cilantro, chopped
Instructions
  1. Season the pork with salt and pepper. Place pork into a large resealable bag. Combine the soy sauce, ginger, garlic, sesame oil and the juice of 1 lime in a medium bowl. Pour the sauce into the resealable bag and gently incorporate to cover the pork. Marinate overnight. Preheat the oven to 350 degrees F. Remove the pork from the marinade and arrange them into a rimmed baking pan. Cover with foil and bake for about 1 hour. Check halfway and flip them. They should look slightly crispy when done. The next step in optional. (Preheat a cast iron grill pan to medium heat. Grill the pork if you want.) Slice the pork into small pieces.
  2. In a medium bowl, combine the tomatoes, red onion, jalapeno, cilantro and ½ lime juice and season with salt and pepper.
  3. Heat the tortillas as directed on the package. Assemble the tacos. Top the tortillas with pork, lettuce and the salsa. Enjoy!
