Gluten Free Pot Roast with Caramelized Onions

  1. Season the beef with salt and pepper. Heat a large pan to medium heat then add a splash of olive oil. Sear the beef on all side until lightly browned. Transfer to a slow cooker. Mix the seasoning with 1 cup water and pour over the beef. Set slow cooker on low for 8 hours.
  2. Heat a large pan to medium heat and add butter. Cook the onions and peppers until caramelized about 10 to 12 minutes. Season with salt and pepper.
  3. Preheat oven to 375 degrees F. Arrange the asparagus on a rimmed baking sheet, drizzle some olive oil and season with salt and pepper. Bake for about 8 to 10 minutes or until roasted.
  4. Serve pot roast with the caramelized onions and asparagus. Yum!
