Gluten Free Banana Nut Bread

Serves: 1 loaf
  • 2 cups Orgran Gluten Free All Purpose Plain Flour
  • 1 stick unsalted butter, room temperature
  • ½ cup chopped walnuts
  • 2 large eggs
  • 1 cup sugar
  • 3 ripe bananas
  • 1 tablespoon milk
  • 1 teaspoon salt
  • 1 teaspoon Clabber Girl Baking Soda (this is gluten free)
  • 1 teaspoon McCormick ground cinnamon - gluten free
  1. Preheat oven to 325 degrees f.
  2. Butter a 9x5x3 inch loaf pan.
  3. Cream sugar and butter in a large mixing bowl until light and fluffy.
  4. Add eggs one at a time, beating well after each addition.
  5. In a small bowl, mash bananas with fork. Mix in the cinnamon and milk.
  6. In another bowl, mix together the flour, baking powder, baking soda and salt.
  7. Add the banana mixture to the creamed mixture and stir to combine.
  8. Add dry ingredients, and walnuts mixing until flour disappears.
  9. Pour butter into prepared pan and bake for 1 hour and 10 minutes, or until a toothpick inserted in the center comes out clean.
  10. Set aside to cool about 15 minutes.
  11. Remove from pan. Slice the bread and serve.
