Ingredients
  • 2 pounds ground pork
  • 1 red bell pepper, finely diced
  • 2 medium carrots, finely diced
  • 2 eggs
  • 1 cup grated cheddar cheese
  • 1 cup (diced) Farmland Cooked Ham - Gluten free
  • ½ cup raisins
  • ½ cup Sweet Relish
  • ¼ cup Ener-G Bread Crumbs - gluten free
  • salt and pepper
  • cooking oil for frying
Instructions
  1. Preheat oven to 350 degrees F.
  2. In a large bowl, combine the pork, bell pepper, carrots,raisins, cheese, ham, bread crumbs, sweet relish, eggs and season with salt and pepper. Nicely incorporate all the ingredients together. Divide the meat into 4 equal parts. Grab 4 (cut into same sizes) foil paper, calculate how much you need to wrap 1 portion of the meat. Form the meat mixture into a sausage in the middle of the foil and fold the foil to seal with seam up. Continue with the other meat mixture then place them on a rimmed baking pan. Fill a mug with water and microwave to 3 minutes then pour over the baking pan. This will accelerate cooking. (You can also use a steamer for 45 minutes) Bake for 1 hour. Remove the meat from the foil and slice them diagonally. Fry the embutido 1 to 2 minutes each side. Serve
