Ingredients
- 2 pounds skinless chicken breast, cut into bite pieces
- ½ cup Clabber Girl Cornstarch - gluten free
- ¼ cup Bob's Red Mill All Purpose Flour - gluten free
- 1 egg
- McCormick white pepper - gluten free
- salt
- oil for frying
- SAUCE:
- 1 tablespoon Clabber Girl Cornstarch - gluten free
- 1 tablespoon ginger root, minced
- ½ teaspoon red pepper flakes
- 1 teaspoon garlic. minced
- 1 tablespoon, rice wine
- 1 teaspoon sesame oil
- ¼ cup water, plus 2 tablespoons
- 2 tablespoons San J Tamari Soy Sauce - gluten free
- 5 tablespoons sugar
- 5 tablespoons Heinz white vinegar - gluten free
- 1 orange, zest
Instructions
- Place chicken in a large bowl. Season with salt and white pepper. Add 1 tablespoon oil and mix well. Stir in the egg.
- In another bowl mix the flour and cornstarch together. Add chicken pieces into the flour mixture to coat.
- Heat oil for deep frying to 375 degrees. Add chicken in batches and fry 3 to 4 minutes or until golden crisp. Do not overcook. Remove with a slotted spoon on a paper towel lined plate.; set aside. Cook the remaining chicken.
- Sauce: combine the soy sauce, water, sugar, white vinegar, rice wine, orange zest and sesame oil in a small bowl.
- Heat wok on medium high heat and add 1 tablespoon oil. Add the garlic and ginger, stir fry until fragrant. Add the red pepper flakes and stir for 5 seconds. Add the sauce and bring to a quick boil. Add the chicken.
- Stir 1 tablespoon cornstarch into 2 tablespoons water until smooth and add to the pan. Heat sauce until thickened. Serve
