Ingredients
  • 2 cups uncooked Barilla Penne - gluten free
  • ⅔ cup Hellmann's Mayonnaise - gluten free
  • 1 teaspoon McCormick Onion Powder - gluten free
  • 2 tablespoons Bragg Apple Cider Vinegar - gluten free
  • 1 tablespoon fresh lemon juice
  • ⅓ cup sugar
  • ⅓ cup diced Colby Jack Cheese
  • 1 red bell pepper, diced
  • 1 yellow or orange pepper, diced
  • ⅓ cup diced red onion
  • ½ cup grape tomatoes, halved
  • ½ cup broccoli
Instructions
  1. Cook the pasta according to package directions. Drain and rinse with cold water.
  2. Combine the vegetables in a large bowl. Then add the pasta and diced cheese.
  3. Whisk together the mayonnaise, sugar, vinegar, onion powder, and lemon juice. Toss the pasta salad with the dressing. Serve

Ingredients
  • 1 can (15 oz.) Dole Mandarin Oranges - gluten free
  • 5 tablespoons Marukan Organic Seasoned Rice Vinegar Dressing - gluten free
  • 3 tablespoons San J Soy Sauce - gluten free
  • 1 tablespoon sesame oil
  • ½ lime juice
  • 1 teaspoon fresh grated ginger
  • 2 tablespoons raw honey - naturally gluten free
  • salt and pepper
  • pinch McCormick Red Pepper Flakes - gluten free
  • 1 cucumber, peeled and sliced
  • ½ cup grape tomatoes
  • 1½ cups romaine lettuce, chopped
  • ⅓ cup roasted cashews
  • shredded carrots
  • 2 green onions, sliced
Instructions
  1. In a small bowl, whisk together the soy sauce, Marukan dressing, honey, lime juice, ginger, pepper flakes, sesame oil and season with salt and pepper.
  2. Arrange the vegetables on a large platter. Drizzle the dressing over the salad. Serve

Ingredients
  • 3 cups Campbell's Tomato Juice - gluten free
  • 2 cloves garlic, minced
  • ½ of red onion, sliced
  • 3 hard boiled eggs, cut into wedges
  • 1 zucchini, diced
  • 1 cucumber, diced
  • 5 Roma tomatoes, diced
  • 2 stalks celery, diced
  • ¼ cup olive oil
  • 2 tablespoons sugar
  • salt and pepper
  • fresh cilantro, chopped
  • 1 pound shrimps, shelled and deveined
  • ½ lime, juiced
Instructions
  1. In a blender, combine red onion and garlic. Pulse until finely chopped then add half of the zucchini, half of the cucumber, half of the tomatoes, half of the celery, tomato juice, lime, olive oil and season with salt and pepper. Pulse for about 3 to 5 seconds just to get a rough consistency. You can refrigerate for 1 hour before serving.
  2. Grill or saute the shrimp until opaque. Set aside.
  3. Ladle the soup into bowls, top with the remaining vegetables, grilled shrimps and garnish with eggs and cilantro leaves. Serve

Ingredients
  • 2 or 3 romaine lettuce
  • 1 medium tomato, diced
  • 2 tablespoons fresh chives, chopped
  • ⅓ cup cashew nuts, toasted and chopped
  • ¼ of small red onion, diced
  • Litehouse Lite Ranch Dressing - gluten free
Instructions
  1. Cut the lettuce into 4 sections lengthwise. Arrange them on a large platter.
  2. In a small bowl, combine diced tomato, red onion and chives. Top lettuce with the tomato mixture then the nuts and more chives. Drizzle dressing over the salad. Serve

  • 1 lime
  • 2 tablespoons olive oil
  • ¼ cup fresh cilantro, chopped
  • ¼ of small red onion, diced
  • 1 jalapeno pepper, finely diced
  • salt and pepper
Instructions
  1. Combine all the ingredients in a medium bowl and season with salt and pepper.
  2. This is a great salsa for fish and meat recipes. Super fresh!
