Ingredients
  • 2 packages of chicken tenders (about 2 to 3 pounds)
  • 1 lemon, juiced
  • ⅓ cup chopped fresh cilantro
  • olive oil
  • 2 garlic cloves, minced
  • 1 tablespoon sesame oil
  • 1 tablespoon raw honey - naturally gluten free
  • 1 jalapeno pepper, minced and 2 more, seeded and sliced
  • 1 yellow or red bell pepper, sliced
  • kosher salt
  • black pepper
Instructions
  1. Preheat grill to medium high heat.
  2. Pat dry chicken tenders with paper towels in a large bowl. Drizzle olive oil and season chicken with salt and pepper.
  3. Combine garlic, cilantro, minced jalapeno, honey, lemon juice and sesame oil in a small bowl. Add the mixture with the chicken and gently incorporate together.
  4. Thread chicken onto metal or bamboo skewers alternating with bell peppers and sliced jalapeno peppers.
  5. Grill chicken about 3 to 4 minutes per side until done. Serve

Ingredients
  • 16 chicken tenders (about 2 pounds)
  • vegetable oil for frying
  • ¼ cup Frank's Redhot Original Cayenne Pepper Sauce - gluten free
  • 2 cups Bob's Red Mill All Purpose Flour ( plus 3 tablespoons) - gluten free
  • 1 tablespoon McCormick Garlic Powder - gluten free
  • 1 tablespoon McCormick Onion Powder - gluten free
  • 3 tablespoons butter
  • 3 tablespoon fresh chives, chopped
  • 1½ cups Pacific Chicken Broth - gluten free
  • 2 large eggs, lightly beaten
  • 1 package Van's Gluten Free Waffles
  • salt and pepper
Instructions
  1. Heat about 1½ inch oil in a large heavy-bottomed skillet over medium high heat.
  2. In a large bowl, whisk eggs and hot sauce. Add the chicken in the mixture and toss to coat.
  3. In shallow bowl, combine flour, garlic powder, onion powder and salt and pepper. Set aside 3 tablespoons of the flour mixture for the gravy. Dredge the chicken in the flour mixture shaking off excess.
  4. Fry the chicken until golden and cooked through about 2 to 3 minutes per side. Transfer to plate lined with paper towels.
  5. In a small saucepan, melt butter the add the reserved flour. Stir until smooth then add the chives. Slowly add the broth stirring until smooth.
  6. Toast the waffles according to package directions.
  7. Serve chicken over waffles and drizzle gravy. Yum!

  • 4 chicken breasts, skinless and boneless
  • 2 packages 12 oz Pacific Organic Cream of Mushroom Condensed Soup - gluten free
  • ½ cup whole milk
  • 3 tablespoons butter
  • 2 garlic cloves, minced
  • kosher salt
  • black pepper
  • 1 pound sliced white mushrooms
  • olive oil
  • 1 teaspoon fresh thyme, minced
  • fresh parsley, chopped for garnish
Instructions
  1. Drizzle olive oil over chicken and season with garlic, thyme, salt and pepper.
  2. Preheat a large cast iron pan to medium high heat and cook the chicken about 3 to 4 minutes per side. Transfer to a plate. On the same pan add butter and mushrooms. Saute mushrooms for about 6 to 8 minutes until they start to brown. Season with salt and pepper. Transfer the mushrooms to a plate. Pour the cream of mushrooms and milk to the pan. Bring to a slow boil then add the chicken. Let simmer for a couple minutes, season with salt and pepper then top with the sauteed mushrooms. Garnish with fresh parsley. Yum!

  • 2 to 3 pounds chicken tenders
  • 3 to 5 tablespoons Iguana Habanero Pepper Sauce - gluten free
  • 1 cup Sweet Baby Ray's BBQ Sauce - gluten free
  • McCormick Ground Paprika - gluten free
  • McCormick Ground Chili Powder - gluten free
  • McCormick Garlic Powder - gluten free
  • black pepper
  • kosher salt
  • olive oil
  • 2 tablespoons butter
Instructions
  1. Place the chicken on a shallow dish and season with salt, pepper, paprika, garlic powder and chili powder. Heat a large pan over medium heat and add a splash of olive oil. Cook the chicken about 2 to 3 minutes per side until done and transfer to a platter.
  2. Combine the bbq sauce, habanero sauce and butter in a small saucepan and slowly warm it up.
  3. Serve chicken with the bbq - habanero sauce. Yum!

Instructions
  1. Cook the rice according to package directions.
  2. Transfer to a plate and let it cool. Cool enough to the touch. Divide the rice into equal portions about 4 to 6 depending on how big you want them to be. Wet your hands a few times to prevent the rice from sticking. Place about 2 to 3 tablespoons of chopped chicken in the middle and start molding into a ball.
  3. Cut the seaweed into quarters. Place rice ball on the seaweed and drizzle teriyaki sauce and sprinkle some sesame seeds. Serve
